John Boos custom makes these cutting boards for us from first quality Solid Rock Maple, 23 3/4 inches by 17 1/4 inches and over 1 1/4 inches thick with a 2 1/4 inch thick maple overhang and backsplash. These boards are designed to stay secure to the edge of your counter to stop them from moving or shifting.
(it will not slide while rolling & cutting).

It's similar to maple and it's a totally sustainable natural resource. After harvesting bamboo it grows back quickly since the root system is so dense. Our bamboo products are handcrafted using small bamboo strips glued and pressed together with approved food grade glue (edible).
