VENISON MEATBALLS

Yield - 4 Servings

 

Ingredients -

 

1.5 lb. Ground Venison

1 oz. Chef Depot Wild Game Seasonings

2 oz. Olive Oil

4 oz. Onion, Small Dice

2 oz. Celery, Small Dice

4 oz. Breadcrumbs

4 oz. Tomato Juice

2 Eggs, Beaten

1 t. Dry Basil

1 t. Dry Parsley

1/2 oz. Chef Depot Wild Game Seasonings

Salt & Pepper, As Needed

 

 

 

Method ?

Mix the venison and Chef Depot Wild Game Seasonings in a bowl and let it rest for a few minutes. Using a Chef Knife, dice the celery and onion very small.

(Chef knife, see Products section). Heat a sauté °an and add olive oil, when it is hot add onions and celery, cook for a minute add game seasonings, mix well and let cool.

In a stainless steel bowl beat eggs, add tomato juice and all remaining ingredients,

mix well. Using a small scoop from into round meatballs. Line up on a sheetpan lined with wax paper. Bake at 350 degrees F. for 30 minutes or until brown. Serve with your favorite sauce and pasta.
