Yield - 6 portions
Ingredients -
2 lb. Carrots, Peeled
2 oz. Vichy Water (Substitute with Carbonated Spring Water)
1 T. Sugar
1 oz. Butter
To Taste Salt and White Pepper
As Needed Fresh Parsley, Chopped
Method -
Peel, trim and slice carrots into uniform cuts. Place all ingredients in a saucepan, cover and let simmer, stirring occasionally. Simmer until tender, taste and adjust seasonings, garnish with chopped parsley.
Chefs Note: This is a simple but great tasting vegetable. Vichy Water is a natural sparkling mineral water
that comes from Vichy France. Any quality carbonated bottled water works!
