JUNIPER MARINATED ROAST VENISON LOIN

Yield - 6 Servings

 

Ingredients -

 

4 lb. Venison Loin

1 oz. Chef Depot Wild Game Seasonings

16 Juniper Berries

1 Lemon, Cut in half

1/2 t. Black Pepper

1/4 t. Salt

2 C. Red Wine

4 oz. Salad Oil

2 pc. Garlic Cloves, Crushed

1 pc. Bay Leaf

 

6 pc. Bacon

 

Method -

Rub the venison loin with Wild Game Seasonings. Cut the lemon in half and squeeze into a stainless steel bowl, add wine and combine all in ingredients. Place venison in marinade and cover for at least two hours (overnight preferred). Remove venison loin from marinate and place on a roasting pan. Heat a large saute pan, when it is very hot add two Tablespoons of salad oil and add the venison, brown on all sides. Remove from pan and place in roasting pan, cover with bacon and bake at 325 degrees F. for 20-30 minutes. If you like your meat medium - rare you should cook it to 130 degrees in the center. I use an digital instant thermometer for accurate measurement (see our Products section).

Remove roast from pan and place on a cutting board. Add a cup of the marinate to the roasting pan and bring it to a boil, add a little cornstarch + water to thicken.

Slice roast with a meat fork and meat slicer to 1/2 inch thickness serve with bacon and juniper sauce. The perfect garnish is fresh rosemary!
